COLLEGE CRUNCH
My biggest adjustment in college was eating. As you can imagine, my mom, Teri, is a wonderful cook who always made good wholesome meals. The cafeteria food just wasn’t working for me, so I had to adapt and create a food style all my own. I’m usually in a hurry, running from class to work to home and out again. The dilemma: Creating wholesome meals for one on a college budget. The Solution: Farmers markets, and fresh supermarket-sold in-season fruits and veggies where I can buy small quantities. ~Kate
TIPS:
- Tossed cucumbers, tomatoes, red onion, oil, garlic, and basil make a quick and tasty dinner for one.
- Apple wedges and peanut butter are a tasty pick-me-up.
- Plain yogurt and granola make a quick and healthy snack, any time of day.
- If Snack-shack junk food doesn’t appeal to you, pack tiny bags of wholesome cereal or granola. My favorite is Safeway Organic Bran Flakes.
