PUMPKIN WAFFLES

Serve for a warm and hearty breakfast that’s sure to please!

2 Cups flour
4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
¼ tsp. nutmeg
3 eggs, separated
1 ¾ Cups milk
½ Cup melted butter (1 stick)
½ Cup canned pumpkin

Tie on your apron. Stir together dry ingredients in a large bowl. Add egg yolks, milk, butter, and pumpkin in a medium bowl, gently whisking to combine. Add wet ingredients to dry ingredients, stirring until combined. Beat egg whites stiff, and fold into batter. Pour onto a hot waffle iron. Makes 8 medium-sized waffles.
